After two years in the making, Primo Chicken has opened their doors at 1242 West Lombard St. in Hollins Market adjacent to Union Square. Primo will serve pollo a la brasa, or Peruvian rotisserie chicken, along with sides, Latin American drinks, sodas and desserts. Quarter, half and whole chickens can be ordered and sides include french fries, yuca fries, rice beans, empanadas, plantains, tortillas, cole slaw, and salad.
Owner Ali Eshghi, a Gaithersburg native, purchased and renovated the property in 2010 in hopes to lease the retail space, but eventually decided to open his own restaurant in 2012 with the support of the Union Square Association and the Hollins Roundhouse Association. Eshghi has a background in real estate, but grew up around the business as his father was a restaurateur in Washington, DC.
Eshghi is the son of a Persian father and Spanish mother, but living around so many popular pollo a la brasa restaurants in Montgomery County made him want to bring the Peruvian-style food to his property in Southwest Baltimore.
Primo Chicken is approximately 1500 sq. ft. and seats up to 30 people. It will be open Monday through Saturday from 11am to 8pm, and Sundays from 11am to 6pm, for dine-in or carryout.
